We spent a year tasting our way across Japan before settling here. Ash from the Sakurajima volcano has fed this soil for centuries, and the minerals carry straight into the leaf: deeper color, a rounder finish, almost no bitterness. Kagoshima's warm southern climate also brings first harvest weeks ahead of any other region, so the leaves reach you younger and greener.

For the final three weeks before harvest the plants grow under shade, concentrating sweetness and chlorophyll. We pick only the youngest first-harvest leaves and stone-grind them in small batches. By every measure we know, the result is brighter and cleaner than tins selling for twice the price.
